Mmmm asparagus bacon quiche for supper tonight. :)
2.5 cups chopped asparagus (save the tips for the top)
1 medium onion chopped
9 slices of bacon, chopped and cooked
1.5 cups of milk
1 tsp of salt
1/2 tsp of pepper
1 tbsp melted butter
1 tsp minced garlic (or more)
2 cups of shredded marble cheese
1 cup of shredded cheddar cheese
Cook bacon set aside.
Fry chopped onion ( in the bacon grease is an option) – set aside.
Wisk eggs, salt, pepper melted butter, minced garlic and milk.
In a greased 9″ pie plate pour 1/3- 1/2 of the egg mixture. Put asparagus, onion and bacon ontop and sprinkle 1/2 of both cheeses. Pour the remaining egg mixture over top of the shredded cheese and decorate with asparagus tips and remaining shredded cheeses. Cook for 1 hour at 350. Let set for 10 mins and serve.
